Zibello, culatello and food

My dear Tom,
few days ago I went to a special lesson in Zibello: it gave me some bases to recognize a good culatello.
It seems that already in the 1322 Culatelle was used as gift during the marriage of Andrea of earl Rossi and Giovanna of earl Sanvitale. The first literary references date back to the 1800: first the parmesan poet Giuseppe Callegari and then the sculptor Renato Brozzi, who excahnged infos about culatello with Gabriele D'Annunzio.
After the lesson I ate Culatello, salami, spalla cotta and torta firtta together with a good red wine.
With love
Sigyn
